There are various types of almonds, ranging from tart green almonds to continental almonds, which are simply almonds dipped in chocolate. (Yum!)
But despite the numerous varieties, you can simplify them into three main, overarching types of almonds. These include Nonpareil, California, and Mission Almonds.
The kind I’m most concerned with, of course, is Nonpareil Almonds. That is because they are the smoothest, most aesthetically pleasing type of almonds on the planet!
Their shells also come off easily, so blanching is a cinch. Another benefit is that nonpareil almonds mature early.
Due to all these “superior” benefits, this particular type of almond is great for using in ingredients like trail mix or organic muesli.
California
In contrast, the term “California Almonds” refers to numerous varieties of almonds. To name a few, Carmel, Monterey and Sonora almonds are some of the more popular sub-types that fall under the “California” umbrella.
These types of almonds have thicker shells. Interestingly, they are still quite easy to blanch.
Mission
Now Mission Almonds, on the other hand, have extremely robust exteriors that are hard to remove. Because of this, people rarely blanch Mission Almonds.
And if Nonpareils are the “best looking” type of almonds, then Mission Almonds are surely the ugly ducklings of the bunch! In fact, once you do manage to remove their shells, you’ll find extremely small seeds inside. And they have especially dark, wrinkly skin.
